Soba noodles and braised tofu

Recently, I've been wanting to make vegetarian dishes and see what I can come up with it.
I decided to braise tofu and make some soba noodles! yum.

ingredients needed
a packet of soba noodles
firm tofu
1/4 cup rice vinegar
about 1/2 cup soy sauce
1tbs sesame oil
4-5 stems green onions
1 cucumbers
1 teaspoon korean chili paste
1/3 cup of water
1 tbs of lime juice (at the end)

1. cook up the soba noodles, drain and let cool.
2. chop up the green onions, the cucumbers
3. mix the vinegar, soy sauce, sesame oil, green onions, chili paste, and water together. Set it aside.
4. cut the tofu in squares, and sear it on both sides.
5. Put the sauce you mixed on the stove and bring it to a boil.
6. Once that boils and your tofu is lightly seared, put the tofu into the sauce mixture and bring it to a simmer.
7. simmer for about 15min, and then serve it on top of a bed of soba and some cucumbers! I used the sauce from the braise and then I squeezed just a bit of lime over the noodles. yum.
