Comfort food.

My friend and wonderful roommate needed some comforting...so I thought..hmmm..something baked and something warm!

So I thought up of a baked rice with eggplants and Italian sausages. Success!
I also decided to make use of my Bon Appetit magazine and made a lime meringue tart.

ingredients for the baked rice
2 boxes of garlic long grain rice (haha yes it is from a box)
1 eggplant
2 links of Italian Sausages
1 cup of spaghetti sauce
1/2 cup of parmesan cheese

1. Cook the rice (I put it in my rice cooker...much faster)
2. Pre heat oven on 350 degrees. while the rice is cooking, sauté the sausages until done.
3. once both the sausages and rice is ready, I tossed it together and put it in a baking dish.
4. Slice the eggplant (make it into thin circles) and lightly cook it in the pan with sausage drippings (tastes sooo good)
5. assembling is pretty easy, put the rice/sausage mixture in the pan, (to balance out the saltiness) I poured spaghetti sauce over the rice, sprinkle the parmesan cheese over it, and then placed the eggplant circles on top. Bake it in the 350 degree oven for about 15 min, just until the eggplant is brown and the cheese is gooey. yum. I garnished it with a little bit of basil and parmesan.
